Why does Matthew have Jesus riding into Jerusalem on the back of two animals?

The main explanation is that Matthew, throughout his book, is trying to show how everything Jesus did fulfilled an Old Testament prophecy. In order to make the prophecy work, he probably felt it needed to be two animals as that is how he misinterpreted the Old Testament scriptures.
